2 tablespoon margarine
2 tablespoon wheat flour
1 cup milk (whole, skin, or reconstitued died milk)1/2 teaspoon salt

Melt margarine in a saucepan. Stir in flour and cook for 3 or 4 minutes mover medium heat, stirring constantly. Add milk slowly, always stirring (a wooden spoon is best), add sauce to boiling point to thicken. Add herbs or spices. A heavy-bottomed an is helpful to prevent scorching or stricking. Adjust seasonings and serve. Make it 1 cup.
Saute 1/4 cup finely chopped onions in the margarine until soft. Then add the flour and proceed as above.
Experiment with different herbs and seasonings to produce your own unique sauce: a bay leaf, a hint of nutmeg, basil, thyme, rosemary, or tarragon. For a particularly smooth texture and lighter color, substitute corn flour for whole wheat flour.
If you will be serving the sauce with vegetables that tend to be juicy, blend 1/4 cup of or so of dried skim into the sauce to make it thicker but not richer. You may, in fact replace part or all of the milk with vegetable stock; just drain your cooked vegetables and use the juice.
