1 1/4 cups plain flour rind

2 tablespoon chopped mixed peel
1 teaspoon grated lemon
1/4 cup sugar
1 tablespoon lemon rind
1 1/3 cup honey
1 tablespoon golden syrup
1/2 cup hot water

Sift together flour, soda, cinnamon, salt and nutmeg. Stir in peel, ginger and lemon rind. Beat together margarine and sugar until creamy. Lightly heat in the egg.
Stir in honey and golden syrup and then gradually mix in the dry ingredients. Pour in the hot water, mix until smooth.
