6 ozs butter or substitute
1 cup sugar
2 1/4 cups plain flour
2 1/2 level teaspoon baking powder
1/2 cup orange juice 1/3 cup milk
Beat the butter and sugar to a cream, gradually heat in the eggs and then fold in the softed dry ingredients and combine liquids in alternate amounts. Spread into two 8-inch sandwich tins and bake in a moderate oven for about 35 minutes. Filling 2/3 of a cup of sugar, 2 1/2 level teaspoon cornflour, 1/4 cup water, 2 tablespoons juice, 1 egg, 2 tablespoon orange juice, 2 level tablespoon butter, orange or pineapple pieces.
Blend the sugar, comflour, water, lemon juice, heaten egg and orange juice in the top half of a double boiler. Cook over boiling water strring contantly until the mixture thikness. Simmer 5 minutes, stri in the pineapple, orange, rind and butter annd stand aside to cool.
Use the pineapple filling to sandwich the two orange cakes together. Ice the top with orange flavored icing, decorate orange or pineapple pieces.
