2 teaspoons olive oil
2 small (400g) leeks, chopped
2 cloves garlic, crushed
4 medium (800g) new potatoes, peeled, chopped
1 teaspoon grated lemon rind basil
2 bay leaves
1 litre (4 cups) vegetable stock
1 tablespoon olive Oil
1 small (200g) leek, finely chopped
1 clove garlic, crushed
2 large (500g) tomatoes, seeded peeled and chopped
1 tablespoon chopped fresh
Heat butter and oil in pan, leeks and garlic, cook, stirring 3 minutes, cover and cook further 10 minutes or until leeks are soft. Add potatoes, rind, bay leaves and stock, Simmer, covered about 20 or until potatoes are tender. Blend or process mixture in batches until sooth, serve with tomato topping.
Tomato topping: Heat oil in pan, add leek and garlic, covered, about 10 minutes or until leek is soft. Add tomatoes cook, stirring occasionally, about 10 minutes or until thick. Stir in basil.
Serves 4. Recipe best made just before serving.
