two ounces glace cherries
20z glace ginger
2 large eggs
5 level tablespoon castor sugar
1/2 cup self raising flour
1/4 cornflour pinch salt
1 tablespoon balck coffee
soft butter icing
1/4 cup chopped nuts
Chop the cherries and ginger into small piece and sprinkle them over the base of a greased swiss roll tin. Beat the egg whites until stiff then gradually add the sugar, heating briskly all the while. Beat in the egg yolks, then fold in the sifted flour, cornflour and salt. Carefully fold in the hot coffee and pour the mixture into the prepared tin. Bake in a moderately hot oven fro about 17 minutes. Carefully turn out into a sheet of greaseproof paper which has been dusted with extra sugar. Quickly roll as for a swiss roll and after it is cool, cover with the butter icing and chopped nuts. This roll will cut better, if slightly chilled first.
