1 cup low-fat cottage cheese
2 medium bananas, ripe
1 cup yogurt
Juice of 1/2 lemon
3 teaspoos honey
1/2 teaspoon salt
1/2 cup whole wheat flour
1 teaspoon vanila
1/4 cup dried skim milk
3/4 teaspoon cinamon
1/2 cup combined oats, peanuts and cashewnuts

Preheat over to 350c F slice bananas. To prepare filling blend eggs, yogurt, cottage cheese, and vanilla in blender. When mixed, add flour and salt keepin blender on low speed. Add honey by the tablespoon and finally bananas. If you prefer put bananas add cottage cheese through a food mill, mixing these by hand with the remaining ingredients.
Combine the crush ingredients and press into a greased 9-inch pie plate. Pour filling into crust and bake for about 25 to 35 minutes. Sprinkle with toasted coconut if desired. This light and very tasty dessert comes with a crumb crust. Filling and crust a like are highly nutritious. Serve with strawberries sliced bananas.
