2 cups fresh milk
2 tablespoon cornstarch
3/4 cup brown sugar
1/4 teaspoon vanilla
2 well-beaten eggs
Gently heat 1 1/2 cups of the milk in a heavy pan. Combine cornstarch or arrowroot with reserved milk. Add milk in pan when it is hot. Stir in remaining ingredients and cook over very low heat until thick. Reduce heat further and cook gently about 8 minutes more. For a richer version, mix 1 cup of pudding with one or two well-beaten eggs. Return to pan and heat thoroughly, stirring constantly.
Serve warm or pour into bowls and chill. Garnish with toasted coconut or chopped nuts. Make 2 to 2/12 cups. Serve this simplest of wholesome desserts with fresh bananas or orange slices. it’s a boon for low-cholesterol set, and a replacement for the packaged and canned puddings.
