1 tablespoon active dry yeast
1/2 cup warm water
1/2 cup yogurt
1/2 cup boiling water
1 teaspoon salt
3 or more cups whole wheat
1/2 cup fine cornmeal
1/2 teaspoon baking power
Dissolve yeast in water. Mix together the yogurt and boiling water in a large bowl. Stir in the yeast, then 2 cups of flour, and cover the bowl with a towel. Let this sit in a warm place until double in bulk, leave it overnight. The dough is spongy and will get more sour the longer it sits. Left overnight it may rise and fall several times.
After the dough has doubled in bulk (about 40 to 60 minutes) mis in the remaining flour along with salt and soda. Knead vigrososly adding more flour as needed until you get slightly stcky dough.
Return the dough to the towel, cover it again and let it rise a second time. This takes 30 minutes or more. Punch the dough down and turn it onto a floured surface. Roll it into half-inch thickness with a floured rolling pin. Cut into circules with a flour inch cookies cutter. Dust both sides of the muffins with commeal and set on cookie sheets to rise until doubled in bulk for 45 minutes to hour. If this has been an overnight operation, the dough will be cold, so allow about 2 hours rising time.
Cook on an electric griddle or skillet for 10 minutes on each side at 400c or on a heavy iron griddle over a medium high burner.
The traditional approach to English muffins is not to slice them, but to insert a fork all around the sides and pull them apart gently. Toast them lightly under the broiler. Yields 7 to 8 large muffins.
