225g (80z) medium-sized brown cap mushrooms
2 small red chillies
1 garlic clove
30ml (2 level teaspoon) chopped
salt and pepper
30 ml (2tablespoon) olive oil
100 ml coconut milk.
Thickly slice the mushroom; deseed and chop the chillies; finely chop the shallots.
Heat the oil in a large saute pan. Add crushed garlic, chilli and shallot and cook, stirring for 2 to 3 minutes or until softened.
Add the mushrooms saute for a further 4 to 5 minutes, or until beginning to soften, pour in the coconut milk and bring to the boil. Boil rapidly until the liquid reduces by half and coats the mushrooms. Add half the herbs and simmer for 3 to 4 minutes. Adjust seasoning and serve immediately, garnished with the remaining herbs.
