Mixed Pinwheels


1 X 250g packet cream cheese
1/4 cup sour cream
20 slices brown sugar

Salmon Filling
1X150g can salmon
drained flaked
1 teaspoon grated lemon rind
1 tablespoon lemon juice
1/4 cup red capsicum, finely chopped
salt and pepper to taste

Avocado Filling

2 bacon rashers, finely chopped
1 small avocado, mashed
1 teaspoon lemon juice


Beat softened cream cheese in small bowl with an electric mixer until smooth. Ad the sour cream, beat until combined.

Salmon Filling: Combine all ingredients in a small bowl and mix well.

Avocado Filling: Fry bacon in a pan over heat until crisp, drain combine bacon with avocado and juice in a small bowl and mix well.

Divide cream cheese mixture evenly between salmon filling and avocado filling; mix both well. Refrigerate, covered until firm

Remove crusts from bread. Using a rolling pan, flatten each slice of bread.

Spread half of the bread slices with salmon Filling, the rest with avocado filling. Carefully roll up each slice cover, refrigerate.
To serve, cut into 1cm thick pinwheel.
