2 Good evenly shaped pears
25g (loz) caster sugar
150ml (5oz) double cream
25g (loz) unsalted butter
Peel the pears, keeping the stalks on. In a heavy pan allow the sugar to melt over a very low heat. Add the butter, then the pears. Cook slowly until soft but not breaking up. During cooking, the pears will give off some of their juice and you will have a good syrup.
Remove the pears from the buttery syrup with spoon. Reduce the syrup a little and add the cream. Bring to the boil and let it cook for 3 to 4 minutes, when it will turn to a rich, warm, caramel colour. Remove from the heat. Pour over the pears and serve cold.
